For 7 years I restructured, developed, internationalized, bought and sold the Gault & Millau Gastronomic Guide. And for the last 2 years I have been accompanying startups in the food and foodtech sectors by being present with them.
As the former editor and director at the prestigious Gault & Millau – a French restaurant guide that was founded in 1965 by two restaurant critics, Henri Gault and Christian Millay –, Côme de Chérisey is in the unique position of knowing what makes a good guide and what makes good food. In 2011, Côme de Chérisey purchased Gault & Millau and entirely revamped its structure and business model to focus on discovering young chefs, which was the original purpose of the guide when it was first started. Today, thanks to his years in the field of gastronomy, Côme de Chérisey is invested in promoting food startups and foodtech in French gastronomy.
In this Immersion, guests will have the opportunity to join Côme de Chérisey for a meal at a Michelin-starred restaurant. During the 3-hour Immersion, Côme de Chérisey will tell the guests about his professional career, his philosophy about food, but also about the whole experience of having a meal at a fine dining institution. From learning about the history of the restaurant, its atmosphere, and service, to analyzing what makes an excellent menu through its dishes, the experience will give guests the chance to take their first steps as a food critic.
